Gourmet cuisine meets Alpine innovation in Asian style - that is the culinary signature of Maximilian Reuter, our head chef at RAR. Having worked in top hotels such as the Kempinski Frankfurt, the Kempinski Berchtesgaden and alongside the legendary Bobby Bräuer, he brings not only experience, but also plenty of passion and creativity to the table.
His cuisine? Exciting, surprising and absolutely unforgettable. How about sweetbread dim sum, refined with Sriracha and alpine-spiced spruce tea? Sounds daring - tastes great. Maximilian combines Alpine tradition with Japanese lightness - and creates menus full of flavours that you are guaranteed not to see coming.
RAR under his management is not a place for standards. It is a place for discoveries, explosions of flavour and those moments when all you can think is: ‘Wow, that was special.’
EBENGUT organic farm
Many of our ingredients come directly from the EBENGUT organic farm in Maria Alm - a place as picturesque as our kitchen. High up on a sunny plateau with a view of the Hochkönig, quality, respect and genuine flavour grow here. Our organic chickens lay breakfast eggs with a local flavour, and the tender beef? Also comes from here. And it's whole - because we cook it nose to tail. We use the whole animal, honour every piece and are grateful for what we are allowed to serve. For us, sustainability is not just an empty phrase, it's a way of showing appreciation - for the animal, the product and our guests.
And anyone who has ever tasted the difference between ‘organic’ and ‘real flavour’ knows that this is more than just food. It's a feeling - and a real highlight for your sustainable culinary holiday in Austria.

Welcome to the HOCHKÖNIGIN, where regionality is not just a trend, but a way of life. Our ingredients? They come from here, directly from Maria Alm and the surrounding area. Fresh, sustainable and produced with lots of love.
The beef from the EBENGUT organic farm is completely utilised by us - nose to tail, because we value every piece. Soup chickens and eggs? Also from EBENGUT, of course. And did you know that we get our lamb and butter from Sommerjufen, venison, deer and chamois from the Geisler family, fresh milk from Melchambauer and the finest cheese from Onemoos Bauer? Sounds delicious, doesn't it?
And the best thing? The flavours that make our dishes special grow in our own herb garden. Our kitchen team and our younger guests can pick, sniff and sometimes snack on the sweet currants.
